Ciao! I’m Paolo—the hands, heart, and flour-dusted apron behind Baked by Paolo.
My journey began in my little Italian hometown, where the scent of fresh bread and family recipes filled our kitchen. Baking for me has always been about more than food—it’s about tradition, patience, and sharing moments with the people I love.
When I moved to California, I brought this passion with me, starting small in my own home kitchen, driven by a desire to create real, honest food for my community.
Every loaf, focaccia, and cookie I make is crafted by hand, in small batches, just as I learned in Italy. From naturally leavened sourdough breads and golden, rustic focaccia to cookies so buttery they melt in your mouth—each treat is made with simple, high-quality ingredients and traditional methods. I give every batch the time it needs to develop its best flavor and texture. You won’t find shortcuts here—only authentic processes, a little patience, and lots of amore.
I believe that good food should be a source of comfort and joy.
